My love for cooking began in early adulthood, but if I’m honest, it has always been about more than food. It has always been about people. Today, I am a proud Nana of four (with one more on the way!), a mom to three amazing adult children, and the wife of a loving and supportive husband who believes in every dream I dare to dream. Family is my greatest blessing — and around our table is where so many of our memories have been made.
To me, food is about so much more than a recipe.
It’s about family.
It’s about friendship.
It’s about love, celebration, survival, and fellowship.
Food has a way of bringing people together — sitting side by side, sharing stories, laughing, catching up on life, and enjoying something made with care.
The Chicken Scoop truly began through what I can only describe as divine intervention.
A family friend tasted my chicken salad at a baby shower and absolutely loved it. She asked if I would make some for her to share with others. Before long, people were raving about it and asking, “How can I buy this?” I helped her at a local festival, prepared my chicken salad, and during the lunch rush it sold out in under two hours. People were talking. They were telling their friends. And something special was happening.
One thing led to another, and I reached out to the county health department to learn what it would take to sell my chicken salad the right way. I obtained a commissary, secured my food permit, and began operating with a mobile food cart and catering services. I started small — a few festivals, small platters, deliveries, and lots of Facebook marketing. Word spread quickly. Five-star reviews came in. Customers shared how much they loved it.
Then, just two months later, a Realtor contacted me about a storefront that had become available. The previous owner had sold chicken salad there. It felt like confirmation. I began working on a business plan, and every door started opening. I truly believe God laid this opportunity in my lap.
Because I have been blessed, I want to bless others.
